Product Description

A classic cooked curd cheese, Prairie Tomme ("Tome") is made the same way as Comté, Beaufort, Fontini and similar cow's milk cheeses. Green Dirt Farm Owner and Cheese Maker Sarah Hoffmann was given the recipe by a cheese maker in the Alps several years ago.

Prairie Tomme is a hard, low moisture, long-aged cheese. It has a dense, smooth curd and lovely buttery, nutty flavor. It grates and melts beautifully. We make it in wheels of more than three pounds and age it at minimum of four months before cutting it into wedges when it's ready to eat.

Storing & Serving Suggestions

As with all our aged cheeses, allow your Prairie Tomme to come to room temperature for about 30 minutes before using it.

Because it grates and melts well, Prairie Tomme is lovely in fondues, on toasted sandwiches, grated into salads or pizza. Prairie Tomme is also delicious when served on crackers or with crisp fruits like apples or pears.

It pairs beautifully with Belgian-style ales, barley wine and dessert wines.

    I love this cheese. It has just the right hardness and flavor and goes great with wine and bread or crackers.
