Chef Michael Smith of Michael Smith and Extra Virgin joins us this year for his first Farm Table Dinner! What started with his mother, a restaurant manager, familiarizing him with the daily grind of the kitchen- from peeling potatoes to cleaning and washing dishes- Chef Michael Smith worked hard to become what he is today, a James Beard Award winning chef and owner/chef of Michael Smith and Extra Virgin. Chef Michael Smith began his culinary career in Denver, where he studied under some of the best chefs in the country. In 1985, he traveled to South France to cook and while in Nice and Cassis he discovered the traditional European approach to artisanal products made from the freshest local ingredients. Fueled by this, he returned and worked as a chef in Chicago, France and back again before being recruited to be the Executive Chef of The American in Kansas City, Missouri. Michael quickly breathed new life into the menu with his fresh, simple, unfussy American fare, supported by the foundation of his extensive French training. It was here that Michael won the James Beard Award for “Best Chef in the Midwest.” This was the first James Beard Award win for him and Kansas City! Michael continues to rank among the nation’s most recognized and respected chefs!
