We are so excited to be closing out our Events Barn Season with our very own, Executive Chef Oskar Arévalo!  We could think of no better way to introduce our biggest fans to the chef who will be leading our new culinary direction and overseeing the opening of our new concept in the East Crossroads, “Green Dirt Farm on Oak”!

Originally from Fort Collins, CO, Oskar graduated from Le Cordon Bleu in Austin in 2012. He apprenticed at Uchiko in Austin, then traveled to Australia to work for the Pullman Hotel in Sydney for a year. The following 11 months he spent eating and learning his way through Southeast Asia. He returned to Fort Collins and secured his first Chef de Cuisine role at Fish Restaurant and Market.  After 18 months, he moved to the West Coast and spent a season foraging mushrooms. He moved to Seattle and worked as Chef de Cuisine at Art of the Table under Dustin Ronspies, a James Beard Semi-finalist.

Oskar came to us via France, where he had been working when the pandemic started.  After moving to Kansas City and working full-time at both Corvino and Green Dirt, he accepted the role of Cheesemaker here and quickly progressed to Head Cheesemaker.  He is pleased to have accepted the new position of Executive Chef/Director of Restaurant Operations for Green Dirt Farm.  Oskar is looking forward to using his experience and passion to keep us meeting our goals of providing high quality, sustainable and ecologically sound, local products to our community.

Because the meals rely on ingredients that are sourced from what is fresh and seasonally available, the menus are not created until 1-2 weeks prior to the event.

*Green Dirt Farm dinners are one of a kind meals created around products made on our farm, (artisan cheese and humanely raised lamb meat) as well as other local seasonal small farm products.  Because of our unique focus on specific ingredients for each menu, we cannot guarantee menu adjustments or exceptions for dietary restrictions. Requests or questions regarding dietary restrictions must be emailed and approved prior to purchase.*
