Mulling over where to celebrate with your partner this Valentine’s Day? Dine with us in couples seating at our Green Dirt Farm Creamery in Weston, MO!
Our own Oskar Arévalo will be debuting his role as Executive Chef. Inspired by the arc of romantic love, he will prepare a 5-course tasting menu for our guests, with optional wine pairing. Our pasture-raised lamb and artisan cheese will be featured alongside other select ingredients.
Originally from Fort Collins, CO, Oskar graduated from Le Cordon Bleu in Austin in 2012. He apprenticed at Uchiko in Austin, then traveled to Australia to work for the Pullman Hotel in Sydney for a year. The following 11 months he spent in Southeast Asia, eating any dish he could get his hands on and learning any new cooking method he could. At age 23, he returned to Fort Collins and secured his first Chef de Cuisine role at Fish Restaurant and Market, now called Bistro Nautile. After 18 months, he moved to the West Coast and spent a season foraging mushrooms. He moved to Seattle and worked as Chef de Cuisine at Art of the Table under Dustin Ronspies, a James Beard Semi-finalist.
Oskar came to us at Green Dirt Farm via France, where he had been working when the pandemic started. After moving to Kansas City and working full-time at Corvino and Green Dirt, he accepted the role of Cheesemaker here and quickly progressed to Head Cheesemaker. He is now stepping into his new position as Executive Chef/Director of Restaurant Operations and is delighted to present a night of amorous contemplation through carefully curated cuisine.
