Here in Weston, Missouri, we start with the soil. When we take care of it, keeping it healthy and alive, our pastures grow thick and green. That’s where our dairy sheep spend their days grazing, and you can tell they’re happy. Happy sheep produce incredible milk, the kind that makes our award-winning artisan cheeses taste the way they do. Our commitment to regenerative farming isn’t just about doing right by the planet. It’s what makes every bite of Green Dirt cheese taste so good.
It’s pretty simple, really: healthy soil grows great grass. That grass nourishes our ewes, who give us incredible milk. And that milk? It becomes the cheese that brings people together—our customers, our team, our whole community.

GRASS
Keeping Our Sheep Happy and Healthy
We’ve always believed that sheep are happiest, and give the best milk, when they’re grazing on fresh pasture. With management-intensive rotational grazing, we encourage the tender, nutrient-rich grasses our sheep love, keeping them content, healthy, and thriving.
Throughout the year, our ewes move from pasture to pasture, munching on whatever’s growing—different grasses, wildflowers, all kinds of goodness. And here’s the best part: you can actually taste the difference in the milk, and then in the cheese. We love these seasonal flavor shifts because they tell the story of what the sheep are eating right now.
Sheep milk is amazing! A lot of people find it easier on their digestion than cow’s milk, and it’s packed with good things like antioxidants, A-2 protein, heart-healthy fats, and more calcium than cow’s milk. All of that gets even better when the sheep are out on pasture eating grass. It’s not just healthier; it’s what gives our cheese the taste of our place. Curious to learn more? The very best dairy animal!
At Green Dirt Farm, we believe that happy ewes make the best milk. We take deep pride in giving our dairy sheep attentive, compassionate care, ensuring they stay healthy, comfortable, and thriving—because their wellbeing is the foundation of every cheese we make.
You don’t have to just take our word for it—Green Dirt Farm is certified Animal Welfare Approved, which is one of the toughest standards out there for humane, pasture-based care. What does that mean? Our sheep live outside on pasture where they can graze, hang out together, and just be sheep. Every year, an independent auditor comes out to make sure we’re still meeting those high standards.

We milk our own Animal Welfare Approved ewes, but we also work with other small sheep dairies in rural communities who are growing alongside us. Not all of our partners have the AWA certification yet, but we’re working on it.

MILK
Sheep Milk is the Best Milk!
A traditional cheesemakers’ proverb says “Cow’s milk is for butter, goat’s milk is for drinking, and sheep’s milk is for cheese” and illustrates the high regard for sheep’s milk in the cheesemaking community.
The rich flavors, and unique makeup of sheep’s milk, especially grass-fed sheep’s milk, make it ideal for crafting wonderful cheeses.
The diverse grasses that our sheep eat throughout the year mean our ewes produce milk that is concentrated with a wide array of flavor compounds. This complexity makes for more delightful cheese. In addition, sheep’s milk contains more concentrated milk solids including protein, fat, and calcium, and is a marvelous milk for crafting delicious, nutritious cheeses.

All of our products start with exceptional milk from lovingly-raised animals. As the seasons change, so does the milk—and our cheesemakers adjust their craft to turn it into something delicious. Every batch is a little different depending on what time of year it is. The cheeses might look a bit different, taste a bit different from season to season. And we love that. Those little variations remind us, and you, that real people are making this by hand, following the rhythm of the farm.
