If you haven’t met our newest cheese, Queen of the Woods, now’s the perfect time to say hello. This ooey gooey, decadent wheel blends sheep’s milk and cow’s milk and is wrapped in spruce bark, which infuses the cheese with subtle notes of pine and smoky bacon cooked over a campfire. Warmed gently in the oven with slivers of garlic and fresh rosemary, it becomes irresistibly aromatic and luxuriously melty, perfect for sharing with friends over a crusty baguette or roasted baby potatoes.

Ingredients
- One wheel Queen of the Woods cheese
- 1–2 cloves garlic, thinly sliced
- 1 sprig fresh rosemary, divided into 6–8 small tufts
Directions
- Preheat your oven to 250°F.
- Score the cheese: Use a sharp knife to make small cuts in the top rind of the cheese.
- Add garlic: Insert a slice of garlic into each cut. For a subtle flavor, use one clove; for a bolder taste, go with two.
- Add rosemary: Make additional small cuts as needed and tuck the rosemary sprigs evenly around the top of the cheese.
- Bake: Place the wheel in an oven-safe crock and bake for about 15 minutes, or until the cheese is soft and warm throughout.
- Serve immediately with a crusty baguette, roasted baby potatoes, or seasonal vegetables for dipping.
