A Farm-to-Table Twist on a Classic

As you plan your Thanksgiving feast, there’s one side dish that’s always a must: mashed potatoes. The natural richness of sheep milk adds a velvety smoothness you simply can’t get from cow’s milk, while the creamy tang of our Fresh cheese brings out delicate rosemary and garlic notes. It’s everything you love about mashed potatoes — only dreamier, more flavorful, and unmistakably Green Dirt. Serves 4-6


🥔 Ingredients

  • 3 lbs. Yukon Gold potatoes, cut into 1-inch chunks (peel if preferred)
  • 5 cloves garlic, peeled
  • 8 oz. Green Dirt Farm Rosemary Fresh Sheep’s Milk Cheese, at room temperature
  • 4 Tbsp. unsalted butter, room temperature
  • ½–1 cup Green Dirt Farm Sheep Milk, warmed (or whole milk/cream if needed)
  • Salt and freshly cracked black pepper, to taste

👩‍🍳 Directions

  1. Boil the potatoes: Place potatoes and garlic in a large pot with a tablespoon of salt. Cover with water, bring to a boil, and reduce to a simmer. Cook for 20–25 minutes, until soft.
  2. Mash: Drain well and return to the pot. Mash by hand or pass through a food mill or ricer for a smoother texture.
  3. Add the flavor: Stir in the Rosemary Fresh Sheep’s Milk Cheese and butter while the potatoes are still hot, until fully melted and creamy.
  4. Adjust texture: Add Green Dirt Farm Sheep Milk a splash at a time until you reach your desired consistency.
  5. Season and serve: Add salt and freshly cracked pepper to taste. Garnish with extra rosemary or a drizzle of melted butter if you’re feeling fancy.
