Sheep milk differs naturally from cow’s milk in both its proteins and fats. Its proteins have different structures and digestive behavior, and sheep milk naturally contains only A2 beta-casein rather than the combination of A1 and A2 beta-casein commonly found in cow’s milk. Sheep milk is also naturally rich in short- and medium-chain fatty acids, which are broken down differently during digestion.
